300 g Oyster mushroom
150 g Corn flour
200 g Bread crumbs
2 Eggs - lightly beaten
Salt and Pepper

Methods:
- Clean Oyster Mushroom.
- The lower part of the mushroom stems are tough so cut and discard them. Rapidly wash the gill spaces of the mushroom and gently press between cloth towels to remove excess liquid. Simply tear the mushroom into desirable sizes of your liking.
- Add salt and pepper.
- Heat oil in deep frying pan for 180°C (350°F).
- Coat the mushroom with corn flour and dip into lightly beaten eggs. Finally press the mushroom into bread crumbs and coat evenly.

Deep-fry the mushroom until the coating is golden and crisp. Drain on kitchen paper and serve at once.
